Sushi Cups
Recipe:
● 1 cup sushi rice
● 1 1/4 cup water
● 1 tbsp rice vinegar
● 1/2 tsp salt
● 2 sheets nori/seaweed
● 1 avocado
● BrightFresh® Micro Broccoli
● Edamame
● Salt & pepper
● Spray oil
● Spicy mayo
● Optional: toasted sesame seeds
Instructions:
Cook your sushi rice with water, vinegar, and salt in an instant pot/preferred method until done
Cut your nori sheets to fit your muffin mold
Spread out sushi rice onto your nori sheets and fold them into the muffin mold
Optional: for a crunchier texture, bake the sushi cups @375 for 10 minutes
Lay your edamame on a piece of parchment paper, spray with olive oil, salt and pepper and bake @375f for 15 minutes until crispy
Fill the cups with BrightFresh® Micro Broccoli, avocado and the edamame
Make a homemade spicy mayo with mayo, chilli powder, salt and pepper
Drizzle the spicy mayo on top of the sushi cups and sprinkle some sesame seeds on top
Enjoy!
Pasta Salad
Recipe:
● 1 ½ cups cooked pasta of choice
● 1 red pepper
● ½ onion diced
● BrightFresh® Micro Broccoli
● BrightFresh® Micro Rainbow Mix
● ½ cup corn
● Fresh mozzarella
● Balsamic vinegar/dressing of choice
Instructions:
Place a handful of BrightFresh® Micro Rainbow Mix as your base
Cut the pepper and dice the onion and place on top
Place the corn, cut mozzarella and pasta
Top it with some BrightFresh® Micro Broccoli
Dress with dressing of choice, mix and enjoy!
Cauliflower Crust Pizza
Recipe:
● 1 bag cauliflower rice
● 1 egg
● ⅓ cup shredded cheese
● BrightFresh® Micro Broccoli
● Tomato sauce
● Cheese
● Salt & pepper
Instructions:
Using a cheesecloth, squeeze out the excess water in the cauliflower rice
Once all the liquid is removed, mix in an egg, the cheese and a dash of salt & pepper
Lay this mixture on a piece of parchment paper and form it into a pizza shape
Optional: spray the top of the crust with spray oil for more crispiness
Bake @400f for about 25-30 minutes
Once the crust is baked, top it with a layer of tomato sauce, BrightFresh® Micro Broccoli and cheese
Bake @400f for 6-8 minutes until done
Slice and enjoy!
Baked Beef Tacos
Recipe:
● ½ diced onion
● 1 pound ground meat
● 1 tbsp olive oil
● Salt, pepper, chilli powder
● BrightFresh® Micro Broccoli
● Tortillas (I used 8 inch ones)
● Beans
● Cheese
Instructions:
Heat up olive oil in a pan
Once hot, add in your diced onion
Add in your beef and mix
Add in seasonings of choice
Let it cook until done
Mix in 1 cup BrightFresh® Micro Broccoli
Lay out your tortillas on a piece of parchment paper and spray with oil
Place a spoonful of beans on one half
On top add a nice amount of the beef mixture
Sprinkle some cheese on top
Fold the other half over
Repeat this process with a few tortillas
Bake @425f for 10-12 minutes and enjoy!
