Breakfast Omelette Trio with Microgreens!

There’s something special about a weekend breakfast...a feeling of languishing in the moment and taking time to enjoy each bite. That's why we put together this versatile omelette recipe, to give you a trio of microgreen choices that come together with no fuss and promise to satisfy everyone's cravings. From Micro Rainbow Mix to Micro Arugula and Micro Cilantro, we've got your taste buds covered!

Take a quick trip to the grocer or simply see what you've got in the fridge. Everyone has favorite toppings, so see what everyone's in the mood for, and make each omelette a signature one. Just remember to stick to the power of three: protein, fat and greens. Combining this trio of ingredients creates a balanced and nutrient-dense meal every time!


For our first omelette, we fry bacon up in a skillet, remove, then saute' some creminy mushrooms in the same pan. In a separate pan (non-stick), we pour the egg mixture and heat until edges appear. Then start adding ingredients. Our Micro Rainbow Mix shines in this trio of flavors!

Feeling spicy? Try our next omelette that includes a medium-heat pico de gallo and a 3-cheese Mexican mix. We added Micro Arugula to round out the peppery flavor notes.

Our third omelette features feta cheese, avocado and Micro Cilantro, which are perfect if you want something mild and light. The fresh aroma and texture of all our microgreens is a key ingredient that will give all of your omelette's a crispy balance, no matter which version you make.

Another thing this recipe gives you is time to spare – whether it’s spent brunching over champagne or daydreaming in the clouds in your coffee.

Kitchen Tip: If you have kids and mouths to feed, double the number of eggs and milk. Consider adding sides, like crispy toast or fresh, seasonal fruit.


Meal prep: cut your fruit at night and store in tupperware. Pop the lids and let kiddos choose their own portions. If you’ve got fussy ones, switch the feta to shredded 'chedda'. Again, half the fun is creating a signature omelet that makes your family feel special.

Ingredients: (portions are per omelet/1 serving)

4 eggs

3 tsp. Milk (whatever you choose!)

Cooking spray or 1 tsp. Avocado oil

Himalayan pink sea salt + pepper

Inside choices:

Feta goat cheese, crumbled

3 bacon strips

Pica de Gallo salsa

Mexican 3-cheese variety

Avocado, diced

Cremini Mushrooms - or any variety you like

Fresh fruit, as a side dish

Toast and butter, as a side dish

salt & pepper, to taste

Beverages of your choice: OJ, champagne, coffee (or all 3!)


Let's make the first Omelette together! (after that, repeat with other ingredients and microgreens):


Method:

1. Whisk together 4 egg whites while drizzling in 3 tsp milk (whole or almond milk)

2. Lightly coat a skillet with avocado oil and heat to medium-high. Fry your bacon, pat down with a paper towel and set aside.

3. In same skillet with bacon drippings: drop in chopped mushrooms and saute.

4. In a non-stick pan coated with spray, pour in whisked egg mixture and cook on low heat.

5. Add bacon, mushrooms and Micro Rainbow Mix to one side of omelette.

6. Season with salt/pepper. Using a spatula, peel edges so they don’t burn, about 5 minutes.

7. Flip the top-half of omelette and press down. Let cook another 2-3 minutes.

8. Using a spatula, flip the omelette to cook the other side.

9. Plate up! Add your sides of toast, fruit, beverages like coffee or mimosas!

10. Crown the omelet with a second heaping of Micro Rainbow Mix.

11. Now repeat the other two recipes using Micro Arugula and Micro Cilantro!
