'Chipotle Style' Chicken Bowl with Micro Cilantro

Ingredients:

  • Cilantro lime rice

  • Black beans, rinsed and drained

  • Diced bell peppers (red, yellow, or green)

  • Canned corn, drained

  • Leftover grilled chicken breast, sliced or diced

  • Generous scoop of guacamole

  • Pico de Gallo

  • Mexican shredded cheese

  • BrightFresh® Micro Cilantro

Instructions:

1. Prepare the Cilantro Lime Rice

- Cook the rice according to package instructions.


2. Prepare the Bowl Ingredients

- Heat the black beans in a small saucepan over medium heat until warmed through.
