Ingredients:
2lbs Baby Back Ribs BBQ Sauce:
1 1/2 Cup of BBQ Sauce
1tbsp Liquid Smoke Rub ingredients:
1tbsp Parsley
1tbsp Paprika
1tbsp Onion Powder
1tbsp Garlic Salt
1tbsp Salt
1tbsp Pepper
3/4 Cup of Light Brown Sugar Instant Pot mixture:
1 cup Water
1tbsp of Apple Cider Vinegar
1tbsp Worcestershire Sauce
BrightFresh Micro Rainbow Mix
Method:
Wash ribs, remove membrane, pat dry with a paper towel and place on foil lined baking sheet.
Create the Rub: in a medium bowl combine parsley, paprika, onion powder, garlic salt, salt, pepper, and light brown sugar. Mix well.
Coat the front, back and sides of ribs with the rub. (we put our ribs on a foil-lined baking sheet but you can use any surface.)
Turn on your Instant Pot between 400 - 500 degrees F. Add the water, apple cider vinegar, and Worcestershire sauce and stir.
Put the steam rack inside. Then place ribs inside Instant Pot. (they wrap nicely in a circle. Just make sure they don't drop below the steam rack and touch the water mixture).
Place the lid on Instant Pot and lock into place. Press manual, and cook for 25 minutes.
After 25 minutes: Do a 10-minute natural release and then a quick release. This means opening up the vent. Caution: steam will be hot! We used a wooden spoon to open vent. Then twist open the lid and lift one side of the lid away from you (natural release).
Remove the ribs and place directly on a 2nd clean foil lined baking sheet.
Combine bbq sauce and Liquid Smoke in a bowl. Mix well and spread evenly onto both sides of your cooked ribs. (Now they are truly bbq'd!)
BROIL ribs for 5 minutes. Temps vary, so be sure and watch oven. 450-500 avg broil temp.
Remove from oven and plate up.
Top with our Micro Rainbow Mix.
Add side dishes. Some suggestions: mashed potatoes, pinto beans, side salad with honey vinaigrette, baked potato, loaded, or vegetables, such as broccoli, corn on the cob.
